Ingredients:

  • 6 eggs

  • 1/2 sweet onion, diced

  • 1 red bell pepper, diced

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp paprika

  • 1 tsp salt (plus more for seasoning)

  • 1 tsp olive oil

  • Feta cheese (optional)

  • Fresh parsley, chopped

  • 1 can (28 oz) of crushed or whole peeled tomatoes

Instructions:

  1. Heat 1 teaspoon of olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes until softened.

  2. Stir in the minced garlic, ground cumin, paprika, and 1 teaspoon of salt. Cook for an additional 2 minutes until fragrant.

  3. Add the canned tomatoes to the skillet and combine well. Allow the mixture to simmer for 15-20 minutes, stirring occasionally to prevent sticking.

  4. Create 6 wells in the thickened tomato mixture using a spoon. Carefully crack an egg into each well, ensuring the yolks remain intact. Cover the skillet and cook on low heat for 8-10 minutes, until the egg whites set but the yolks stay runny.

  5. Season to taste with salt and pepper, and garnish with crumbled feta cheese and chopped fresh parsley.
