Spring Herb-Crusted Salmon

Ingredients:
• 4 salmon fillets (4-6 oz each), skin on
• Salt and pepper, to taste
• For the herb crust:
• 1/2 cup fresh parsley, chopped
• 1/4 cup fresh dill, chopped
• 2 tbsp fresh chives, chopped
• 1/4 cup Panko breadcrumbs
• 1 lemon, zested and divided (reserve half for the crust, and the other half for garnish)
• 2 tbsp extra-virgin olive oil
• Salt, Garlic Powder, & Rosemary to Season the Salmon
Instructions:
1 Preheat the oven: Preheat your oven to 400°F (200°C).
2 Prepare the herb crust: In a small bowl, combine the chopped parsley, dill, chives, Panko breadcrumbs, half of the lemon zest, olive oil, salt, and pepper. Mix well to form a paste.
3 Season the salmon: Season the salmon fillets with salt, garlic powder and rosemary on both sides.
4 Add the herb crust: Press the herb mixture onto the top of each salmon fillet, covering the surface evenly.
5 Bake the salmon: Place the herb-crusted salmon fillets on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
6 Serve: Transfer the salmon fillets to individual plates. Garnish with the remaining lemon zest and lemon wedges, if desired. Enjoy this delicious and nutritious springtime salmon dish with a zesty lemon twist!
