Ingredients:

• 1 cup almond flour

• 2 tbsp maple syrup

• 2 tbsp sunbutter

• 1/2 tbsp vanilla extract

• 2 tbsp coconut oil, melted

• 1/4 cup chopped dark chocolate

• 2 scoops of collagen or vanilla protein powder

• Optional: pinch of sea salt

Instructions:

1 In a medium-sized bowl, mix together the almond flour, maple syrup, sunbutter, vanilla extract, and melted coconut oil until well combined. The mixture should be slightly sticky and hold together when pressed.

2 Stir in the chopped dark chocolate and the scoops of collagen until evenly distributed.

3 If desired, add a pinch of sea salt to enhance the flavors. Mix well.

4 Line a baking sheet or large plate with parchment paper.

5 Using a tablespoon or small ice cream scoop, portion out the mixture and roll it into balls, placing them on the prepared baking sheet or plate.

6 Once all the mixture has been rolled into bites, place the baking sheet or plate in the refrigerator for at least 30 minutes to allow the bites to firm up.

7 Once the High Protein Cookie Dough Bites have set, transfer them to an airtight container and store in the refrigerator for up to two weeks or in the freezer for up to three months. Enjoy these tasty bites!
