Ingredients:

• 1 can (15 ounces) chickpeas, rinsed and drained

• 1/2 cup almond butter

• 1/4 cup pure maple syrup

• 2 teaspoons vanilla extract

• 1/2 teaspoon salt

• 1/4 teaspoon baking powder

• 1/4 teaspoon baking soda

• 1/2 cup date caramel

Instructions:

1. Preheat your oven to 350 degrees F (175 degrees C) and line an 8x8 inch baking pan with parchment paper or spray with non-stick spray.

2. In a food processor or high-speed blender, add all ingredients except date caramel. Process until the batter is smooth.

3. Spread half of the batter evenly in the prepared pan.

4. Spread the date caramel over the batter.

5. Carefully spread the remaining batter over the date caramel.

6. Bake for 15-20 minutes or until a toothpick comes out clean and edges are a tiny bit brown. The batter may look underdone, but you don't want them to dry out!

7. Cool the pan for 20 minutes on a wire rack. They will be quite soft initially but will firm up as they cool. Cut into squares.

Enjoy your caramel blondies!
