Wholesome Sunday Morning Pancakes

This healthy pancake recipe lets you indulge in delicious pancakes without guilt, using nutritious ingredients like whole wheat flour and unsweetened almond milk. Ingredients:

  • 1/4 cup whole wheat flour or spelt flour

  • 1/2 tsp baking powder

  • Pinch of salt

  • 1/4 cup unsweetened almond milk (or any milk of your choice)

  • 1 large egg white

  • 1/2 tsp vanilla extract

  • 1 tbsp Agave or Maple Syrup substitute

  • Side of Berries



Instructions:

  1. In a small mixing bowl, whisk together the whole wheat flour, baking powder, and salt.

  2. In another bowl, combine the unsweetened almond milk, egg white, vanilla extract, and Agave. Mix well.

  3. Gradually pour the wet ingredients into the dry ingredients while stirring. Mix until just combined, but be careful not to overmix. The batter should be slightly lumpy.

  4. Let the batter sit for about 5 minutes to thicken. This will help create fluffy pancakes.

  5. Preheat a non-stick skillet or griddle over medium-low heat. Lightly coat the surface with non-stick cooking spray or a few drops of oil.

  6. Pour about 1/4 cup of batter onto the heated surface for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

  7. Gently flip the pancake using a spatula and cook for an additional 1-2 minutes, or until the other side is golden brown.

  8. Serve your thick and fluffy golden pancakes with sugar-free syrup, fresh fruit, or light whipped cream if desired. Enjoy!
