Carrot Cake Chia Pudding With Cinnamon Honey Roasted Walnuts & Pecans

Ingredients:
1/4 cup chia seeds
1 cup unsweetened almond milk (or any other plant-based milk)
1/2 cup grated carrots
2 tablespoons pure maple syrup (adjust sweetness to taste)
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of ground ginger
1/4 cup chopped pecans
1/4 cup chopped walnuts
2 tablespoons honey
1 additional teaspoon cinnamon (for the nuts)
2 tablespoons unsweetened shredded coconut (for topping)
Optional: raisins or chopped pineapple (for extra sweetness and texture)
Instructions:
Prepare the Nuts:
Preheat your oven to 350°F (175°C).
Mix Ingredients: In a mixing bowl, combine the chopped pecans and walnuts with 2 tablespoons of honey and an additional teaspoon of cinnamon. Stir well to ensure all the nuts are evenly coated.
Spread Nuts: Spread the nut mixture evenly in a single layer, on a prepared baking sheet lined with parchment paper.
Bake: Bake in the preheated oven for 8-10 minutes, watching closely towards the end to prevent burning.
Cool: Remove the nuts from the oven and let them cool completely on the baking sheet. They will crisp up as they cool.
Prepare the Chia Pudding:
Mix the Chia Pudding Base: In a mixing bowl, combine the chia seeds, almond milk, maple syrup, vanilla extract, cinnamon, nutmeg, and ginger. Stir well to mix everything thoroughly.
Add Carrots: Stir in the grated carrots. Mix well to ensure even distribution.
Refrigerate: Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight. This allows the chia seeds to absorb the liquid and thicken into a pudding-like consistency.
Serve:
Stir the Pudding: Once set, give the chia pudding a good stir to break up any clumps.
Assemble: Spoon the pudding into serving glasses or bowls.
Add Toppings: Top each serving with the cooled honey roasted pecans and walnuts, shredded coconut, and if desired, raisins or chopped pineapple.
Enjoy: Serve chilled as a refreshing and wholesome dessert or a satisfying breakfast.
