These cookies are a testament to the fact that indulgence and nutrition can go hand in hand.
A star ingredient in these cookies is dark chocolate, renowned for its high concentration of magnesium. Magnesium is a vital nutrient that plays an essential role in over 300 enzyme reactions within the human body, including DNA synthesis, muscle and nerve function, and most notably, the regulation of neurotransmitters.
Regular intake of magnesium can aid in hormone balance, mood regulation, and promote better sleep – which are aspects crucial to overall well-being. But what's more appealing than these benefits is the delightful taste that dark chocolate brings to our cookies, striking the perfect balance between fudgy and chewy. So, the next time you're craving a sweet treat, reach for my Fudgy Brownie Cookies. They're more than just cookies – they're an enjoyable way to supplement your magnesium intake. Because who said healthy couldn't be delicious?

Ingredients:
4 ounces of dark chocolate (70% cocoa or more)
2 large eggs, room temperature
1/3 cup of coconut sugar
1/3 cup of melted coconut oil (measured when melted, not solid)
1 teaspoon of vanilla extract
1/3 cup of almond flour (as a healthier alternative to all-purpose flour)
1 tablespoon of arrowroot powder
3 tablespoons of unsweetened cocoa powder
1 teaspoon of baking powder
A pinch of salt
1/2 cup of dark chocolate chips (look for no-sugar-added chips if possible)
Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Melt the 4 ounces of dark chocolate. You can do this in a microwave, stirring every 20 seconds, or using a double boiler.
In a bowl, whisk together the eggs, coconut sugar, melted coconut oil, and vanilla extract until well combined.
In a separate bowl, mix together the almond flour, arrowroot powder, cocoa powder, baking powder, and salt.
Pour the melted chocolate into the egg mixture and stir until well combined.
Gradually add the dry ingredients to the wet ingredients, stirring until the dough forms.
Stir in the dark chocolate chips.
Using a cookie scoop or spoon, drop dollops of dough onto the prepared baking sheet.
Bake for about 10-12 minutes, until the cookies are set around the edges but still soft in the middle.
Let the cookies cool on the baking sheet for about 10 minutes, then transfer to a wire rack to cool completely.
