Spaghetti Squash Pomodoro

This healthy and homemade Spaghetti Squash Pomodoro recipe is a healthier vegetarian spin on traditional pasta pomodoro. The spaghetti squash is first halved, seasoned, and baked until tender, then it is scraped into spaghetti-like strands. Meanwhile, fresh grape tomatoes are sautéed with olive oil, oregano, salt, pepper, and a bay leaf before adding a can of Don Pepino's Spaghetti Sauce. Once the sauce is simmering and the squash is ready, the two are combined to create a fresh, flavorful, and incredibly satisfying meal. It's a testament to how simple, quality ingredients can create a truly delicious dish.

Ingredients:

1 1 Spaghetti Squash

2 1 pack of Grape Tomatoes

3 Olive Oil

4 1 tsp Oregano

5 Salt, to taste

6 Pepper, to taste

7 1 Bay Leaf

8 1 can of Don Pepino's Spaghetti Sauce



Instructions:


Tomato Sauce:

1 Heat a medium-sized pan over medium heat.

2 Once the pan is hot, add a drizzle of olive oil.

3 Add the grape tomatoes to the pan, stirring occasionally.

4 Season the tomatoes with oregano, salt, pepper, and a bay leaf.

5 Sauté the tomatoes for about 10 minutes, or until they are soft and the flavors are well combined.

6 Add the can of Don Pepino's Spaghetti Sauce to the pan.

7 Reduce the heat to low and let the sauce simmer until it starts to boil.


Spaghetti Squash:

1 Preheat your oven to 375°F (190°C).

2 Carefully cut the spaghetti squash in half. Start by inserting the tip of the knife into the center of the squash, then move the knife downwards. Pull apart the two halves.

3 Drizzle the inside of the squash with olive oil, then season with salt and pepper.

4 Place the squash halves, cut side down, on a greased baking sheet.

5 Bake the squash in the preheated oven for about 50 minutes, or until the inside is tender and easily scrapes into spaghetti-like strands with a fork.


Assembling the Dish:

1 Once the squash is cooked, remove it from the oven and let it cool for a few minutes.

2 Using a fork, scrape the inside of the squash to create spaghetti-like strands.

3 Pour the tomato sauce over the spaghetti squash strands.

4 Toss gently to combine the sauce with the squash.
