Soft & Chewy Chocolate Chip Cookies

Indulge in the delicious taste of these soft and chewy chocolate chip cookies that are not only scrumptious but also gluten-free and Passover friendly! Made with almond flour and sweetened with honey or maple syrup, these cookies boast a delicate nutty flavor and just the right amount of sweetness. The addition of 80% dark chocolate chips brings a rich, satisfying taste, making them perfect for any chocolate lover.
Ingredients:
• 2 cups almond flour
• 1/4 tsp kosher salt
• 1/2 tsp baking soda
• 1/3 cup coconut oil, melted
• 1/4 cup honey/maple syrup/agave
• 1 large egg
• 1 tsp pure vanilla extract
• 3/4 cup 80% dark chocolate chips

Instructions:
1. Preheat your oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
2. In a medium mixing bowl, combine almond flour, kosher salt, and baking soda. Mix well to ensure there are no lumps.
3. In a separate bowl, whisk together the melted coconut oil, honey or maple syrup, egg, and vanilla extract.
4. Add the wet ingredients to the dry ingredients, and mix until well combined. Fold in the chocolate chips.
5. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each cookie with the back of a spoon or your fingers.
6. Bake for 5 minutes, or until the edges are slightly golden. Keep a close eye on them to prevent over-baking.
7. Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
