Introducing my simple and tasty Salmon Spring Rolls - a healthy choice for a light lunch or appetizer. Made with fresh salmon and a mix of crunchy vegetables, these rolls are wrapped in rice paper and served with a flavorful dipping sauce. Give our Salmon Spring Rolls a try and enjoy a nutritious and satisfying meal that's easy to prepare and perfect for everyday healthy eating.

Ingredients: Salmon:
1 4-5 oz salmon fillet
1/4 cup of fresh herbs
A pinch of garlic powder
A pinch of salt
Wraps:
A handful of mixed greens
Vegetables of your choice (e.g., cucumber, carrots, peppers, tomato)
1/2 avocado
2 rice paper wraps
Dressing:
1.5 tablespoons sesame oil
2 tablespoons peanut butter
Juice of 1/2 lemon or lime
1 tablespoon soy sauce or coconut aminos
Instructions:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Rinse and pat dry the salmon fillet. Place it on the prepared baking sheet.
Season the salmon with salt, garlic powder, and top with fresh herbs. Bake for 20-25 minutes or until it flakes easily.
While the salmon is baking, slice your chosen vegetables and avocado into thin strips.
Allow the salmon to cool after baking, then cut it into two pieces.
To prepare the dressing, whisk together sesame oil, peanut butter, lemon or lime juice, and soy sauce or coconut aminos in a small bowl. Add a little water if needed to achieve the desired consistency.
Briefly soak each rice paper wrap in warm water for 20-30 seconds. Place the softened wrap on a cutting board.
Fill each wrap with mixed greens, vegetables, avocado, and salmon. Roll it up tightly, cut in half, and serve with the dressing as a dipping sauce. Enjoy your delicious salmon spring rolls!
