Miso Maitake Mushrooms

This miso maitake mushrooms recipe is a delicious and simple way to enjoy the earthy flavors of maitake mushrooms, also known as hen-of-the-woods mushrooms. The umami-rich miso paste adds depth to the dish, creating a perfect side or appetizer.

Ingredients:
• 1 lb maitake mushrooms, cleaned and separated into smaller pieces
• 3 tablespoons white miso paste
• 2 tablespoons mirin (sweet rice wine)
• 2 tablespoons soy sauce
• 1 tablespoon sake
• 1 tablespoon avocado oil
• 1 tablespoon sesame oil
• 2 cloves garlic, minced
• 1 tablespoon freshly grated ginger
• 1/4 cup chopped green onions
• 1 tablespoon toasted sesame seeds
• Optional: fresh cilantro or microgreens for garnish
Instructions:
1 Prepare the miso glaze: In a small bowl, whisk together the miso paste, mirin, soy sauce, and sake until smooth. Set aside.
2 Heat the avocado oil and sesame oil in a large skillet over medium heat. Add the garlic and ginger, and cook for about 1 minute, until fragrant.
3 Add the maitake mushrooms to the skillet, and cook for about 5-7 minutes, stirring occasionally, until the mushrooms are tender and slightly golden.
4 Reduce the heat to low, and carefully pour the miso glaze mixture over the mushrooms. Stir to coat the mushrooms evenly, and continue to cook for an additional 3-4 minutes, until the glaze has thickened and the flavors have melded together.
5 Remove the skillet from heat, and stir in the chopped green onions.
6 Transfer the miso maitake mushrooms to a serving plate. Sprinkle with toasted sesame seeds and garnish with fresh cilantro or microgreens, if desired. Serve immediately as a side dish or appetizer. Enjoy!
