Ingredients:
• 2 cups of assorted nuts and seeds (such as almonds, peanuts, pistachios, cashews, pumpkin seeds, flax meal, craisins, and hemp seeds)
• 1 tsp cinnamon
• 1 tsp salt
• 1/4 cup coconut oil, melted
• 1/4 cup maple syrup
• 1 tsp vanilla extract
Instructions:
1 Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
2 In a large mixing bowl, combine the 2 cups of assorted nuts and seeds. Add in the 1 teaspoon of cinnamon and 1 teaspoon of salt, mixing well to evenly coat the nuts and seeds.
3 In a separate small bowl, whisk together the 1/4 cup melted coconut oil, 1/4 cup maple syrup, and 1 teaspoon of vanilla extract.
4 Pour the wet mixture over the dry nut and seed mixture, stirring well to ensure all ingredients are evenly coated.
5 Spread the granola mixture evenly onto the prepared baking sheet in a single layer.
6 Bake for 15 minutes, keeping a close eye on the granola to ensure it doesn't burn. If it begins to brown too quickly, just remove from the oven.
7 Remove the granola from the oven and allow it to cool on the baking sheet for at least 30 minutes. This will help the granola to harden and form clusters.
8 After cooling, gently break the granola into clumps and store in an airtight container at room temperature for up to two weeks.
