Maple Balsamic Roasted Carrots

Savor these Lightly Maple Balsamic Glazed Carrots as a tasty and healthy side dish. Tender oven-roasted carrots are drizzled with a mild maple balsamic glaze, while optional crumbled feta or chopped roasted nuts add extra flavor and texture. Transform this side into a complete meal by pairing it with your choice of protein and a side of grains.

Ingredients:
• 1 pound (about 6-8 medium) carrots, peeled and sliced into 1/2 inch thick rounds or diagonally into 1/2 inch thick slices
• 1 tablespoon olive oil
• Salt and black pepper, to taste
• 1 tablespoon pure maple syrup
• 3 tablespoons balsamic vinegar
• 1/2 teaspoon fresh thyme leaves, finely chopped (optional)
• Fresh parsley, chopped, for garnish (optional)
Instructions:
1 Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
2 In a large mixing bowl, combine the sliced carrots with olive oil, salt, black pepper, maple syrup and balsamic vinegar. Toss well to coat the carrots evenly.
3 Spread the carrots in a single layer on the prepared baking sheet. Roast them in the preheated oven for 15-20 minutes or until they are tender and slightly caramelized, stirring occasionally to ensure even cooking.
