Lentil Bolognese

Indulge in my Hearty Lentil Bolognese – a flavorful and nourishing twist on the classic Italian dish. This delightful sauce is packed with veggies and protein-rich lentils, making it a healthy and delicious choice for your favorite pasta, zoodles, or spaghetti squash.

Ingredients:

  • 1/2 onion, finely chopped

  • 1/2 large carrot (or one smaller), finely chopped

  • 1/2 red pepper, finely chopped

  • 1/2 cup chopped Bella mushrooms

  • 2 cups steamed lentils

  • 1 tbsp Italian seasoning

  • 1 bay leaf

  • 1 tsp salt

  • 1 can tomato sauce

  • Less than 1/2 tomato sauce can filled with white wine or water


Directions:

  1. Heat a little avocado oil in a large skillet over medium heat.

  2. Add the chopped onion, carrot, red pepper, and mushrooms to the skillet and cook until the vegetables are tender.

  3. Stir in the steamed lentils, mashing them slightly to replicate the texture of ground meat.

  4. Add the Italian seasoning, bay leaf, salt, and tomato sauce to the skillet and mix well.

  5. Fill the empty tomato sauce can with less than half white wine or water and pour it into the skillet.

  6. Bring the sauce to a simmer and let it cook until the wine has reduced. For the best flavor, simmer for an extended period (up to an hour), but you can also cook it for as little as 10 minutes if short on time.

  7. Remove the bay leaf and serve the Lentil Bolognese over your favorite pasta, zoodles, or spaghetti squash.
