Tomato Soup Ingredients:
5 vine-ripe tomatoes
1 large package of colorful cherry tomatoes
1 whole head of garlic
1 red bell pepper
1 tbsp Italian seasoning
1/2 sweet onion
1 shallot
1 tbsp olive oil
2 cups vegetable broth
1 bunch of basil
Tomato Soup Directions:
Preheat the oven to 400°F (200°C).
Roughly chop all the vegetables (except basil) and place them on a baking tray. Drizzle with olive oil, salt, and Italian seasoning.
Roast the vegetables until cooked through and softened, ensuring the garlic is soft and that a considerable amount of water has been released.
Transfer the roasted vegetables to a pot, and add 2 cups of vegetable broth or water (depending on your preferred soup consistency).
Add a handful of basil to the pot and blend using an immersion blender or a countertop blender.
Warm the soup and serve alongside your favorite grilled cheese sandwich.

Sourdough bread
Avocado
Sun-dried tomatoes
Pesto
Black truffle cheese, shredded
