Yield: 9-10 balls

Ingredients:

• 1/2 cup rolled oats

• 1/2 cup chocolate protein powder

• 1/4 cup unsweetened cacao powder

• 1/4 cup unsweetened shredded coconut

• 3 tbsp almond butter

• 1/2 cup pitted Medjool dates, soaked in hot water for 10 minutes and drained

• 2 tbsp hemp seeds

• 2-4 tbsp unsweetened almond milk or any preferred milk alternative (adjust as needed for consistency)

• 1/2 tsp vanilla extract



Instructions:

1 In a large mixing bowl, combine the rolled oats, collagen powder, cocoa powder, shredded coconut, and hemp seeds. Mix well.

2 In a food processor or high-speed blender, process the soaked and drained Medjool dates until they form a smooth paste.

3 In a separate microwave-safe bowl, combine the almond butter and date paste. Microwave for 20-30 seconds or until the mixture becomes slightly runny. If the mixture is too thick, add 1-2 tablespoons of almond milk to help with mixing.

4 Pour the almond butter and date mixture into the dry ingredients. Add the vanilla extract, and mix well until all ingredients are combined. Adjust the almond milk as needed to achieve a sticky consistency that holds together when pressed. If the mixture seems too dry, add more almond milk, one tablespoon at a time, until the desired consistency is reached.

5 Line a baking sheet or large plate with parchment paper.

6 Using your hands, roll the mixture into balls, each about 1-inch in diameter. Place the protein balls onto the parchment paper.

7 Refrigerate the protein balls for at least 30 minutes to set. Once they have firmed up, transfer them to an airtight container and store in the refrigerator for up to two weeks.
