Crunchy Tofu Avocado Salad with Peanut Sesame Dressing

Salad Ingredients:

  • Mixed greens or romaine

  • Scallions

  • Broccoli

  • Shredded carrots

  • Shredded cabbage

  • Shredded Brussels sprouts

  • Chopped mint & parsley (or other herbs you have)

  • Cucumbers

  • Avocado

  • Chopped peanuts

  • Pan-seared tofu cubed (4 minutes each side)



Dressing Ingredients:

  • 1 clove garlic

  • 2 tbsp sesame oil

  • 1 tbsp rice vinegar

  • ¼ cup smooth peanut butter (microwaved to make smoother)

  • 1 square of frozen ginger/ 1 tsp fresh grated

  • Juice of 1/2 lemon

  • 2 tbsp soy sauce

  • 3 tbsp water to thin




Instructions:

  1. Chop all salad ingredients and mix them in a large bowl.

  2. In a separate bowl, whisk together all dressing ingredients until smooth and well-combined. If needed, add more water to achieve the desired consistency.

  3. Pan-sear the tofu cubes for about 4 minutes on each side, until golden brown and crispy.

  4. Top the salad with the pan-seared tofu and chopped peanuts.

  5. Drizzle the peanut sesame dressing over the salad, making sure not to overdress.

  6. Toss the salad gently to combine and serve.
