Makes 3 rolls
Spring Roll Ingredients:
• 1 cup frozen steamed spinach
• 1/4 cup caramelized sweet onion
• 1/4 cup Friendship whipped cottage cheese
• 1/4 cup feta cheese, crumbled
• 1 large egg, separated
• 3 rice paper wraps
• Toasted sesame seeds, for sprinkling
Tangy Herbed Yogurt Dip Ingredients:
• 1/4 cup Greek yogurt
• 1/2 tsp cumin
• 1/2 tsp garlic powder
• 1 tbsp lemon juice
• A drizzle of agave syrup
• Freshly chopped mint and parsley, to taste
Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a medium-sized mixing bowl, combine the steamed spinach, caramelized onion, whipped cottage cheese, feta cheese, and egg white. Mix well until all ingredients are evenly distributed.
3. In a shallow dish or plate large enough to accommodate the rice paper wraps, whisk together the egg yolk and 1/2 cup of warm water.
4. One at a time, dip the rice paper wraps into the egg yolk and water mixture, making sure to coat both sides, to soften the wraps.
5. Lay the softened wrap on a flat surface, and sprinkle toasted sesame seeds on it. Spoon about 1/3 of the spinach and cheese mixture onto the wrap, and fold in the sides before rolling it up tightly.
6. Place the rolled spring rolls onto a parchment-lined baking sheet, seam side down.
7. Bake the spring rolls in the preheated oven for 20-30 minutes, or until they become crispy and golden brown. If a wrap breaks during baking, simply wrap another softened wrap around it and return to the oven until crispy.
8. While the spring rolls are baking, prepare the yogurt dip. In a small bowl, combine the Greek yogurt, cumin, garlic powder, lemon juice, agave syrup, and freshly chopped mint and parsley. Mix well.
9. Remove the spring rolls from the oven and allow them to cool slightly before serving. Serve the rolls with the yogurt dip on the side. Enjoy your delicious and crispy spinach and feta stuffed spring rolls!
