Cauliflower Soup

I'm delighted to share this simple and delicious soup recipe that delivers a creamy, satisfying texture without the need for dairy, cream, or any unnecessary additives.

Ingredients:
1 head of cauliflower, chopped
1/2 sweet onion
4 cups of broth or water
2 tsp salt
Directions:
In a large pot, sauté the sweet onion in a bit of avocado oil until it turns golden brown.
Add the chopped cauliflower, broth (or water), and salt to the pot. Stir to combine.
Cook the mixture until the cauliflower becomes fork-tender, which should take about 10 minutes.
Turn off the heat and use an immersion blender to blend the soup until it reaches a smooth, creamy consistency.
Serve the soup with your choice of accompaniments, such as baked cauliflower gnocchi, pumpkin seeds, or pistachios for added crunch.
