Caesar Salad without the Ick

If you're like me and you don't like mustard, mayonnaise, or anchovies, but you love Caesar salad, this recipe is for you! It's crunchy, salty, creamy, and just perfect without the ick! We've replaced traditional ingredients with mustard powder, vegan cream cheese, and capers to create a tasty dressing that still delivers that classic Caesar flavor without any of the ingredients you'd rather avoid. Ingredients:
Juice of 2 lemons
1/4 cup extra virgin olive oil
1 tsp mustard powder
1 tsp garlic powder
2 tsp salt
2 cloves fresh garlic, minced
1 tbsp nutritional yeast or parmesan (depending on your preference)
1 tsp capers, drained
1 tsp vegan cream cheese
1 head of lettuce, chopped (romaine or iceberg)
Instructions:
In a blender or food processor, combine lemon juice, extra virgin olive oil, mustard powder, garlic powder, salt, minced garlic, nutritional yeast (or parmesan if you're not making it vegan), capers, and vegan cream cheese. Blend until smooth and well combined.
In a large salad bowl, add the chopped lettuce.
Drizzle the prepared dressing over the lettuce and toss well, ensuring all the leaves are coated evenly.
If using nutritional yeast for a vegan option, sprinkle it over the top of the salad. If using parmesan, grate it over the salad.
Serve immediately and enjoy your delicious Caesar salad without the ick!
