Best Ever Healthy Tuna Salad

Ingredients:
• 2 handfuls arugula
• 1/2 cup diced cucumbers
• 1/2 cup cherry tomatoes
• 1/2 cup chopped artichoke hearts
• 1/2 avocado, sliced
• 1 tsp capers with brine
• 1 tbsp green olives with brine
• 1 tsp sun-dried tomatoes in oil (with oil)
• A handful of alfalfa sprouts
• A handful of broccoli microgreens
• 1 can of tuna in oil (drain half the oil)
• A drizzle of red wine vinegar
• Juice of half a lemon
• 1 tsp truffle salt
Instructions:
1 In a large mixing bowl, add the arugula, diced cucumbers, cherry tomatoes, chopped artichoke hearts, and avocado slices.
2 Gently mix in the capers with brine, green olives with brine, and sun-dried tomatoes with oil.
3 Add the alfalfa sprouts and broccoli microgreens to the salad and toss gently to combine.
4 Drain half the oil from the canned tuna and flake the tuna over the salad.
5 Drizzle red wine vinegar and squeeze the juice of half a lemon over the salad.
6 Sprinkle 1 tsp of truffle salt over the salad, and give it a final toss to combine all the ingredients.
