Asparagus with Vegan Hollandaise Sauce

Ingredients:
For the asparagus:
1 lb (450g) fresh asparagus, trimmed
Salt, for blanching
For the vegan hollandaise sauce:
1/2 cup (75g) raw cashews, soaked for 2-4 hours, then drained (or use the quick soak method)
1/2 cup (120ml) unsweetened almond milk or other plant-based milk
Juice of one lemon
1 tbsp nutritional yeast
1/2 tsp turmeric powder
1/2 tsp Dijon mustard
1/4 tsp paprika
1/4 tsp garlic powder
Salt and pepper, to taste
1/2 tbsp vegan cream cheese (e.g., Kite Hill)
Instructions:
Fill a large pot with water, add a pinch of salt, and bring it to a boil. Prepare a large bowl of ice water to use for blanching the asparagus.
Once the water is boiling, add the trimmed asparagus and cook for 2-3 minutes, or until tender but still vibrant green. Cooking time may vary depending on the thickness of the asparagus.
Quickly remove the asparagus from the boiling water and transfer it to the bowl of ice water to stop the cooking process. Let the asparagus sit in the ice water for 1-2 minutes, then drain and set aside.
While the asparagus is cooling, prepare the vegan hollandaise sauce. In a high-speed blender, combine the soaked cashews, almond milk, juice of one lemon, nutritional yeast, turmeric powder, mustard powder, paprika, garlic powder, salt, pepper, and vegan cream cheese. Blend until smooth and creamy. If the sauce is too thick, add more almond milk, one tablespoon at a time, until desired consistency is reached.
Taste the sauce and adjust seasonings if necessary. If you prefer a warm sauce, heat it gently in a small saucepan over low heat, stirring frequently to prevent scorching.
Arrange the blanched asparagus on a serving platter. Drizzle the vegan hollandaise sauce over the top or serve it on the side.
