Asian Sesame Kelp Noodles

I recently tried kelp noodles for the first time and was pleasantly surprised by how delicious they turned out! As a health coach, I also appreciate the added health benefits of kelp and other sea vegetables. These noodles are rich in iodine, a trace mineral that’s essential for proper thyroid function and overall hormone health. Our bodies can’t make iodine on their own, so we need to get it from the food we eat. Kelp noodles are a great source of this important nutrient, and they’re also low in calories and carbs. I highly recommend giving them a try.

Ingredients:


1 package kelp noodles

1 tbsp sesame oil

2 cloves fresh garlic, chopped

1 tbsp soy sauce

1/4 tsp salt

1 tsp sesame seeds


Instructions:


Soak kelp noodles in a bowl of hot water mixed with lemon juice, baking soda, and salt. Let sit for 5 minutes.

Drain the water and rinse the noodles well. Use your hands to gently massage the noodles to ensure they are fully coated in the mixture.

Dry the noodles with a clean towel or paper towel.

Heat up sesame oil in a saucepan over medium heat.

Add chopped garlic and sauté until fragrant and lightly browned.

Add soy sauce and salt to the pan, stirring for 30 seconds.

Add the kelp noodles to the pan and toss until fully coated with the sauce.

Cook for an additional 2-3 minutes until the noodles are heated through.

Top with sesame seeds and serve immediately. Enjoy your delicious and nutritious kelp noodle dish!
