This cool, nutritious snack is perfect for satisfying your sweet tooth while providing a burst of energy and freshness. Ingredients:

  • 2 cups Greek yogurt (plain or vanilla)

  • 1/4 cup honey (optional, for added sweetness)

  • 2 cups mixed berries (blueberries, raspberries, strawberries, blackberries, etc.)

  • 1 cup granola (choose your favorite)




Instructions:

  1. Line a baking sheet with parchment paper or a silicone baking mat, ensuring it is large enough to accommodate the yogurt mixture's spread.

  2. In a medium-sized bowl, combine the Greek yogurt and honey (if using) until smooth and well-blended.

  3. Gently fold in the granola, ensuring it is evenly distributed throughout the yogurt mixture.

  4. Pour the yogurt and granola mixture onto the lined baking sheet, using a spatula to spread it out evenly. Aim for a thickness of about 1/4 to 1/2 inch, depending on your preference.

  5. Scatter the mixed berries evenly over the yogurt and granola layer, gently pressing them into the yogurt to secure their placement.

  6. Place the baking sheet in the freezer for at least 4 hours, or until the yogurt bark is completely frozen and firm.

  7. Once frozen, remove the baking sheet from the freezer and use a knife or your hands to break the bark into smaller pieces.

  8. Enjoy immediately, or store the yogurt bark in an airtight container in the freezer for up to 2 weeks.
