Ingredients:

• 1 1/2 cups whole wheat or spelt flour

• 1/2 cup almond flour

• 2 tsp baking powder

• 1/2 tsp baking soda

• 1/4 tsp salt

• 1 1/2 tsp ground turmeric

• 1 tsp ground cinnamon

• 1/2 tsp ground ginger

• 1/4 tsp ground nutmeg

• 1 cup finely grated carrots (about 2-3 medium-sized carrots)

• 1 large banana or 1 cup of mashed banana/applesauce

• 1/2 cup honey or maple syrup

• 1/3 cup extra virgin olive oil

• 2 large eggs, room temperature

• 1 tsp pure vanilla extract

• 1/4 cup unsweetened almond milk

• Optional: 1/2 cup chopped walnuts, pecans or raisins




Instructions:

1. Preheat your oven to 350°F (180°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.

2. In a large mixing bowl, whisk together the whole wheat or spelt flour, almond flour, baking powder, baking soda, salt, turmeric, cinnamon, ginger, and nutmeg.

3. In another mixing bowl, combine the grated carrots, mashed bananas, honey or maple syrup, olive oil, eggs, and vanilla extract. Mix well until all ingredients are fully incorporated.

4. Slowly add the wet ingredients to the dry ingredients, mixing gently until just combined. Be careful not to overmix.

5. Gradually add the almond milk, stirring gently, until you achieve a smooth batter consistency. If desired, fold in the chopped walnuts or raisins.

6. Pour the batter into the prepared cake pan and smooth the top with a spatula.

7. Bake for 35-45 minutes, or until a toothpick inserted in the center of the cake comes out clean.

8. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
