Coconut Caramel Banana Bites

Ingredients:
4 ripe bananas
1.5 cups dates, pitted and soaked in hot water for 10 minutes
1/4 cup water
1/4 cup almond milk
1 tbsp coconut oil
1 tsp vanilla extract
1/4 tsp salt
1 cup shredded coconut
Instructions:
First, prepare the date caramel. Drain the soaked dates and place them in a blender or food processor. Add water, almond milk, coconut oil, vanilla extract, and salt. Blend until you get a smooth and creamy caramel consistency. If the caramel is too thick, add more almond milk, a tablespoon at a time, until you achieve the desired consistency. Set aside.
Peel and slice the bananas into 1/2-inch thick rounds.
Line a baking sheet with parchment paper or a silicone baking mat.
Place the shredded coconut in a shallow bowl or plate.
One by one, dip each banana slice into the date caramel, ensuring it is fully coated. Then, gently roll the coated banana slice in the shredded coconut, covering all sides.
Place the coated banana bites on the prepared baking sheet, leaving some space between each piece.
Once all the banana bites are prepared, place the baking sheet in the freezer for at least 2 hours, or until the banana bites are firm and fully frozen.
Enjoy these refreshing coconut banana caramel bites straight from the freezer, or store them in an airtight container in the freezer for up to 2 weeks.
