Ingredients:

  • 2 cups almond flour

  • 1 tsp cinnamon

  • Pinch of salt

  • 1/4 cup coconut oil

  • 1/4 cup maple syrup

  • 1 tsp vanilla extract

  • 1 tsp almond extract

  • Your choice of jelly for filling

Directions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, combine the almond flour, cinnamon, and salt.

  3. In a separate bowl, mix the coconut oil, maple syrup, vanilla extract, and almond extract.

  4. Add the wet ingredients to the dry ingredients and mix until well combined.

  5. Using 2 tablespoons of batter per cookie, form the cookies and place them on the prepared baking sheet.

  6. Flatten the cookies and create a small indent in the center with your thumb.

  7. Bake the cookies for 13-15 minutes or until the edges are golden brown.

  8. Remove the cookies from the oven and let them cool completely on a wire rack.

  9. Once the cookies are cooled, fill the indents with your choice of jelly.
